When I was in Chicago last October, I went to this amazing store that was huge and had darling clothes for men, women and kids and the best thing is the low prices for these high fashion clothes. There is one of these stores opening in Scottsdale this fall...

Just Peachy
This time of year I find myself looking for signs where I can get some good Utah Peaches. I bought my first bunch the other day and yum they were good, so many things you can do with them, but the best is to just cut them up and eat them right out of the bowl, good with a little vanilla ice cream too. Lynn will always go for a fresh peach shake, he grew up having one every Sunday night that his Mom would make, still his favorite . Here are a few good recipes you can do with your peaches...
Peach Cobbler
4-6 cups peeled and sliced fresh peaches
1 3/4 Cup Whole Oats
1 1/2 Cups Flour
1 teaspoon Baking Powder
3/4 Cup packed Brown Sugar
1/2 Cup (1 stick) butter, melted
1 1/2 tsp Cinnamon
Preheat the over to 375 degrees F.
Lightly grease the bottom of a casserole dish. Layer the dish with the peaches. Combine all the ingredients together until crumbly. Generously spread the topping over the peaches. Bake 25 to 30 minutes or until topping is golden brown. Let cool and serve with vanilla ice cream.
Cake
1 1/2 cups sugar
2 eggs
3/4 cup oil
1 1/3 cups mashed peaches
2 cups flour
1 tsp. soda
1 tsp. cinnamon
dash of salt
*Mix oil, eggs, and sugar. Add mashed peaches. Stir in the flour, soda, cinnamon, and salt. Put in a 9" greased round pan or bunt pan or can use loaf pans. Bake at 350 degrees for 30 minutes-check with toothpick.
Sauce
1 cup sugar
2 tsp. flour
1/2 cup butter
2 egg yolks
2/3 cup evaporated milk
1 tsp. vanilla
*In small sauce pan, combine ingredients well. Boil until thickened. WATCH CAREFULLY--will scorch.
Serve cake with sauce and fresh peaches.

Back to School
I have always been one of those Mom's who hates to see the summer end and have the kids go back to school. I loved this summer and it went way to fast, plus my baby girl is now in 9th grade, just thinking about her being in High School next year makes me cry. I remember with my boys how fast those last 3 years of school went, but I try not to think of that and will enjoy these days that I have now. Kell had her first cheer performance at meet your locker for the 7th graders, she did an awesome job, she has a great cheer squad and its going to be fun going to watch her perform this year.

Summer Vacation Part 2 in Wyoming
The second week of our vacation we went to our family cabin in Star Valley Wyoming. I love being there and enjoy the cool weather, everything was so green and beautiful. The first two days, Lynn's brother Allen came and they went fishing with a guide, something they do every year. One of my favorite things to do is drive up to Jackson Hole, its about 45 miles from the cabin and its amazing scenery to see, I was way excited that I saw a Bald Eagle this year. While Lynn and Allen fished, I took Josh and Kell up to JH and we did a little shopping and ate at our favorite restaurant "Merry Piglets" really good Mexican food. We went to the kids favorite store "Yippy I-O Candy Store" they pick out their favorite candy and so many flavors of taffy to choose from, and they have the best chocolates and fudge. Two things we love to do is go ride the Alpine slides and go White-Water Rafting on the Snake River. Sometimes when I am there seeing how beautiful it is and loving the cool weather, I wonder what I am doing in Arizona!!! We missed the rest of our family, Jared, Lexi and Jesse, but next year we will all be together for the first time in 3 years, it will be a great reunion.
